The Story Behind My Birthday Cake

When I was 8 years old, I asked my Granny what she wanted for her birthday.  She said that she saw something in a magazine the other day...I expected her to show me a pair of shoes or a dress or something...instead, she pulled out a (fairly complex) cake recipe and told me that she wanted ME to make it for her!

Man...at 8 years old, this cake was HARD work!  I had never really chopped anything, so why not start with a SOLID Hershey's bar!  But...I did it.  And it was SO SO good!

Now, it's my very favorite cake to make--I even made it for our wedding reception!  And I have been craving it a ton lately.  So I decided I wanted to make it for my own birthday!

Since it's a special cake to me, I decided I wanted the kids to make it with me....so they did!




Making the cake itself is quite simple.  I honestly didn't even make it from scratch.  I just bought a box of cake mix!

Cheating....I know!  But totally worth the ease...especially since I wanted these two to help!

Mommy added the eggs as they got them from the carton and counted them...

1....2....3!






Next comes the frosting!!!  Not gonna lie....it's DEFINITELY the hard part.

Actually, the frosting itself is not...but the recipe calls for 15 oz of CHOCOLATE that needs to be chopped!!  The recipe itself calls for all milk chocolate, but I like to add some dark chocolate.  If it were all up to me, I would do ALL dark chocolate, but that's not really the rest of my family's cup of tea, and I want them to enjoy the cake too....so a mix it is!


Chop Chop chop!

Once you have all of the chocolate chopped, separate it into 2 parts...about 4/5 and 1/5 of the chocolate. The larger section will go in the frosting, and the smaller section will be used to decorate the cake!



Now for the frosting!!

First beat 8 oz of cream cheese, 1/2 cup of granulated sugar, and 1 cup of powdered sugar until they are creamy!

 Then fold in the the larger portion of the chocolate and 12 oz of cool whip!









Now it's time to frost the cake!!!






When it's all done, top it with the remaining chocolate!!

How Do I Homeschool with a Toddler at home?

I still can't imagine being thrown into homeschooling so quickly. I know I've said this before, but I personally needed the time to prepare. Reflections on Praying with Paul
